Description
Cheese vat it’s a kind of processing equipment for produce cheese or milk pimple, it can realize the function of fermentation, curd,
cutting, and whey discharge of raw milk, usually, inside of cheese vat will install multiple breaking devices or cutting knife or stirring so
on agitation device.
Key Functions & Process Capabilities
1. Cooling and Acidification
After pasteurization, milk is cooled to 36°C to optimize conditions for starter cultures and rennet. Once transferred to the vat, the milk is uniformly stirred while acidifiers—such as bacterial cultures, whey, or direct acids (e.g., lactic, citric, phosphoric, or acetic acid)—are introduced gradually until the pH falls below 5.9. Slow addition and consistent stirring prevent localized protein denaturation.
2. Heating and Stirring
Controlled heating encourages curd contraction, facilitating whey expulsion and improving curd firmness. Throughout the heating process, gentle stirring prevents agglomeration of curd particles. The temperature is gradually raised from 36°C to 41°C over 30 minutes, with stirring intensity increasing progressively. Once the target temperature is reached, heating ceases and the temperature is maintained for 20 minutes. When the whey pH reaches 5.70–5.80, it is ready for drainage. Overheating (beyond 50°C) must be avoided to prevent surface hardening of curds, which impedes whey release and results in excess moisture.
