Description
The homogenizer is a equipment used for homogenizing and emulsifying liquid products. It is widely applied in the production, research, and development of food, milk extracts, beverages, pharmaceuticals, fine chemicals, and biotechnology. Products like cow milk or soy milk can be homogenized under high pressure, significantly breaking down fat globules, making them easier to digest and absorb, and enhancing their edibility.
This equipment is also used in ice cream production to improve the fineness and porosity of liquid materials. Additionally, it can be applied in the production of emulsions, adhesives, and juices to prevent or reduce feed liquid stratification, improve appearance, and make the product brighter, more aromatic, and flavorful. The product is diluted by the homogenizer and dried into powder through a spray drying device, making the homogenizer a key piece of equipment in powder production.
Working principle
The high-pressure homogenizer is mainly composed of a high-pressure homogenization chamber and a pressurization mechanism. The interior of the high-pressure homogenization chamber has a specially designed geometric shape. Under the action of the pressurization mechanism, the high-pressure solution quickly passes through the homogenization chamber, and the material is simultaneously subjected to mechanical forces such as high-speed shear, high-frequency oscillation, cavitation phenomenon, and convective impact, as well as corresponding thermal effects. The resulting mechanical forces and chemical effects can induce changes in the physical, chemical, and structural properties of the material's macromolecules, ultimately achieving homogenization.
